Instead of setting up his stall in a hotel or mall, the UK-born chef has launched his latest restaurant in two adjoined shophouses in the River Valley conservation area. You’re greeted at the door by one of the ex-Raffles doormen, then you’re invited to navigate a leafy pathway to the restaurant. The dim lighting within the shophouse seems to conjure up the appeal of a cosy English pub in winter (albeit a slightly glamorous one) and the welcome by the front of house and waiting staff is just as warm. Dishes include potted duck for starters and a rack of lamb cutlets as an entree. Prices are on the high side, but it’s worth it. Think British comfort food with a Michelin-starred touch. Open now.

It’s quite clear that when Raffles Hotel relaunches after its multi-million dollar renovations, it’s coming back with a bang. For the three-Michelin star chef will be opening her latest restaurant in the hotel’s main dining room. She said recently that she always looks for “aromatic complexity and powerful taste”. The three Michelin-star restaurant Frantzén is about to launch its sister restaurant in Singapore. On 21 November, the Scandinavian chef will throw open the doors to the Bukit Pasoh Road shophouse, which was formerly the home of Restaurant Andre. Yes, it looks as if we are all about to fall in love with Scandinavian cooking.
