We love the Heure Bleue Palais for being so different to standard hotels. This superb Relais & Châteaux property makes you really feel like you're in a private home, and the service reflects that. The location is brilliant, right next to the UNESCO World Heritage Site of the Medina, so you can easily head back to comfort after a day of walking the ancient streets. We definitely recommend evening drinks on the rooftop terrace where you not only look over Essaouira, but also the beach.
